Chicken and mushroom in Hot Tomato Sauce
Ingredients

boneless chicken, cut into 1-inch pieces 500 grams
quartered mushrooms 10 to 12
tomato 1
spring onions 3 to 4
garlic 5 cloves
butter 2 tbsp
Salt to taste
tomato puree 3/4 cup
crushed red chilies 1 tbsp
Worcestershire sauce 1 1/2 tsp
crushed black peppercorns 5 to 6
honey 2 tsp
dried oregano 1/4 tsp
green onions, chopped 2 to 3 stalks


Method

1. Wash and blanch the tomato in a quarter cup of water in a bowl, covered, in the microwave on high for 2 minutes.
2. Remove, put in cold water, peel, cut into half, deseed and further cut into quarter inch cubes.
3. Mix the butter, spring onions, garlic, chicken cubes and salt in a deep microwave bowl. Cover and cook in the microwave on high for 4 minutes.
4. Add diced tomato, tomato puree, crushed red chillies, Worcestershire sauce, peppercorns and mushrooms. Cover and cook in the microwave on high for 3 minutes.
5. Add honey and dried oregano to the tomato gravy, cover and cook in the microwave on high for 2 minutes.
6. Sprinkle spring onion greens and serve hot.
