Jalapeno Corn Muffins

Jalapeno Corn Muffins

all-purpose flour 1 ¼ cups
cornmeal 1/3 cup
granulated sugar 1/3
corn flour 3 ½ tsp
salt 1 1/8 tsp
baking powder 2 ½ tsp
whole milk 1 1/3 cups
eggs 2
oil 2 1/2 tbsp
unsalted butter, melted 5 1/3 tbsp
finely diced, seeded jalapeno 5 tbsp


1. Preheat the oven to 350ºF. Coat twelve silicone muffin cups (or a twelve cup muffin pan) with butter.
2. Combine the flour, cornmeal, sugar, corn flour, salt, and baking powder in a large bowl.
3. Whisk together the milk, eggs, and oil in a separate medium-size bowl
4. Add the wet ingredients to the dry ingredient and mix well with a soft rubber spatula.
5. Add the butter and jalapeno. Stir until completely incorporated.
6. Ladle the batter evenly into the prepared cups. Bake for 26 to 28 minutes on the center rack, until slightly golden on top.
