medium grained rice 1/2 cups
split urad dal 1/2 cup
yogurt, slightly beaten 1/4 cup
green chilli paste 1 tsp
whole peppercorns 10-12
oil 1 tsp
fruit salt (Eno) 1 tsp
roasted sesame seeds,coarsely ground black pepper, chilli powder (optional) for garnish 1-2 tsp
Salt to taste


1. Soak the rice and urad dal separately, at least for 6-7 hours.
2. Drain the rice and grind it in your processor until it becomes a paste. The texture will still feel grainy.
3. Pour it out into a large bowl.
4. Next grind the urad dal. Add water only if required.
5. The texture of this is velvety and very smooth. Pour it into the same bowl with the rice batter.
6. Add the yogurt, salt, peppercorns and mix well. Ferment overnight.
7. The next day, add chilli paste and oil . Mix well.
8. Now sprinkle fruit salt over the batter and add 2 tsp of water over it. Top it with the roasted seeds, powders etc.
9. Be quick and add the batter to the greased small pan.
10. Keep it in the large pan containing boiling water, cover the large pan with a lid. Steam for 10-12 minutes till the dhokla is done.
11. Check the doneness by inserting a toothpick in the dhokla.
12.If not done, then steam again for some seconds or minutes.
13.Remove the dhokla from the pan once warm or cooled.
